Post image for Quinoa Taqueritos

Yes, it is another recipe for quinoa, but this one is SO good.  I found the recipe on Pinterest and since I had some cooked quinoa left over from the previous recipe I decided to try it out.  Boy, am I glad that I did.  I modified the recipe a bit and I didn't use the tortillas shown above.  It was super easy to make...here's my verison:

Quinoa filling for Tacos
  • 1 T+ of Olive Oil
  • 1/2 cup green onions diced
  • 1/2 cup shredded cabbage
  • 1 cup corn (I used frozen & it wasn't thawed)
  • 1/2 green bell pepper diced (or red)
  • 4 cloves garlic minced
  • 1 1/2 cups cooked quinoa
  • 1 1/2 cups cooked black beans (drained & rinsed)
  • 1/2 salsa
  • 1/2 teaspoon chili powder
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 T fresh lime juice (I didn't have this, but it would be so good with it)
  • 1 avocado, peeled & diced
  • shredded romaine lettuce


Heat skillet with olive oil to medium.  Add onions, cabbage corn & peppers.  (I added corn first & let cook a little bit by itself since it was frozen).  Cook for six minutes.  Add garlic & cook additional minute more.  Add in quinoa, black beans, salsa, chili powder, salt &  black pepper.  Stir until well combined & cook another 3 to 4 minutes.  Add lime & stir.  

I used regular corn tortillas & then filled with this mixture, topping it with the diced avocados & lettuce.  YUM.   
Mark had it as his side with his tacos.  It was almost like a rice mixture.

I had plenty left over so I used a flour tortilla & made a burrito, added some cheese and had that for lunch today at work!
