This child...
is giving me fits again. It seems that for the last 3 years I/we have made his life miserable, he hates me, I expect too much out of him, he hates his life, he hates his brother & sister. And do you know why we ended up in this argument in the first place? Because I signed him up for a day & 1/2 agility football camp at the HS for tomorrow and Saturday. You see he had other plans that he had made with his friends, but instead of talking to me like a rational human being we had one of our colossal fights. He wants to live somewhere else....

Appetizer
Appetizer: Feta and Cucumber Dip
1 Tbsp. lemon juice
1 large seedless cucumber, peeled and diced
One half cup red onion, diced
One quarter cup fresh mint, chopped
One quarter cup fresh dill, chopped
Salt and pepper to taste
Pita bread
Combine all ingredients except pita bread and mix well. Separate pita bread and toast the halves, then cut them diagonally and serve with dip. If you prefer you may also use crackers.
Then to make it even better, make the pita chips for dipping- very easy...
Pita Chips
3 large loaves of pita bread
6 ts olive oil
2 small garlic cloves, crushed
coarse salt
Preheat oven to 400. In a small bowl combine crush garlic & olive oil. Mix well & allow to sit for 2-4 minutes to allow the flavors to "marry" each other.
Take each pita loaf & cut into eight triangles. Brush the garlic mixture evenly over each side of the pita triangles. Sprinkle with Kosher salt. Bake for 5-7 minutes.

Memorial Day to Labor Day and any day in between, these cute red, white and blue treats are sweetly patriotic.
Prep Time: 45 minTotal Time: 2 hours 40 minMakes: 40 bars
Crust
2 1/4 cups all-purpose flour
2/3 cup sugar
1/2 teaspoon grated lemon peel
1/4 teaspoon salt
1 cup butter or margarine, cut into tablespoon-size pieces
Topping
1 package (8 oz) cream cheese, softened
2 tablespoons packed brown sugar
1 container (6 oz) Yoplait® Original 99% Fat Free lemon burst yogurt
1 teaspoon grated lemon peel
40 fresh raspberries (about 6 1/2 oz)
40 fresh blackberries (8 oz)
40 fresh blueberries (about 3 oz)

Heat oven to 350°F. Grease or spray 15x10x1-inch pan. In large bowl, mix all crust ingredients except butter. Using pastry blender, cut in butter until mixture looks like fine crumbs; press evenly in pan.

Bake 18 to 20 minutes or until edges are light golden. Cool completely, about 40 minutes.

In large bowl, beat cream cheese and brown sugar with electric mixer on low speed until blended. Add yogurt and 1 teaspoon lemon peel; beat until blended. Spread mixture over crust. Refrigerate at least 1 hour but no longer than 24 hours.
4.
Cut into 10 rows by 4 rows. Arrange 1 of each kind of berry on each bar. Store in refrigerator.

I am so embarrassed right now.....I think my face is beet red and my body just broke out in a cold sweat!
I have recently signed up/created a profile, whatever you call it on Linkedin. Trying to network, ya know? Anyway, I was trying to send an email to someone in my contact list that was imported from my aol email account. And guess what? You got it, I sent it to EVERYONE in my email account- that means people from the kids schools, teachers, parents from the various sports team...even DirecTV got an email from me. Nice.... oh and best of all, my ex boss did too. I tried to withdraw them all, but it still sends a stinkin' email...
I am soooooooooooooo embarrassed....

Have any of you ever bought these restaurant certificates and used them? I have- we got some when we went to Vegas in January and they really work. I am such a skeptic/pessimist, so when we got some to take to Vegas to use at our hotel (they are restaurant specific) I thought there would be a catch or something. No, no catch and the restaurants took them! Amazing.
Anyway, you can get $25 gift certificates for $5 until June third from here. They just added Lonestar Restaurante to their list- and on Tuesdays at Lonestar kids eat free (with purchase of a regular entre!) What a bargain! :)
