Wine Tasting Dinner

Easy Wine-Tasting Dinner
Uncork and unwind. Pour, swirl, sip, savor. An easy wine-tasting dinner that puts the fun back in entertaining. (If you can shop and toast bread, you can pull this off.)
Found this idea on Martha Stewart. com....I think I want to do this...it gave recipes, scorecards for the wines etc. Doesn't that sound fun.

Riding

This is what we did this weekend... We went to the desert with Caroline & Mike. It was alot of fun. The kids had fun playing together and Tanner brought along one of his friends so everyone had someone to hang with.

We took a family ride to Slash X and had french fries & beer. Caroline drove me in the Polaris, the guys on their motorcycles and all the kids rode there too! So very proud of them, it was a six mile ride there! They did great! Riley was comical on the way home though, she rode the 50 motorcycle out there and Jake rode the quad, they switched for the ride home. The quad doesn't go as fast and she was so mad that she had to ride the quad that she was throwing a temper tantrum as she was riding...kicking her feet, giving Mark looks as he rode past. Caroline & I were cracking up at her. Boy was she mad!

Caroline- I will make extra copies of the pictures when I have them developed!

Jake

I think Jake has had a good first year of T-ball. He was on a team with a great coach who told them that "as long as you are having fun, then we are winning". I think that is a good philosophy. Jake always had fun, so he would say that they won! Too cute.

But he did spend alot of time in the outfield playing with his glove, pulling his hat so low on his head that he had to lift his chin up just to see out from under his hat and every time the ball came to him he would drop to his knees and roll around on the ground with the ball...(most of the boys did this..)

I think this year was a good experience for him to want to play again next year...

Doesn't this look good?

I don't know where I found this recipe...I have had it saved forever. Too bad I don't have the energy to make it!
Whole Wheat Pasta with Cauliflower, Walnuts and Ricotta Salata
Chez Panisse Vegetables
One of the loveliest things about this recipe–and there are many, in my mind–is the way the recipe is laid out. It is as if Alice Waters in the kitchen with you, telling you that you can just chop all that while the water boils and really explaining the central tenet of this recipe: cauliflower that is cooked to a crunch, not steamed and for heaven’s sake, not boiled. She also thinks you should have this with a crisp white wine–for real!
Serves 6

2 heads cauliflower
1 medium onion
4 cloves garlic
1 pound whole-wheat pasta
Extra-virgin olive oil
Salt and pepper
1 pinch red pepper flakes
White wine vinegar
1/2 lemon
1/2 cup toasted walnuts
4 ounces ricotta salata or feta cheese

Put a large pot of water on to boil. Cut the cauliflower into small flowerets. Peel the onion and slice it very thin. Peel and finely chop the garlic. Put the pasta on to cook.
Saute the cauliflower in olive oil in a large saute pan. When the cauliflower begins to soften, season with salt and pepper and add the sliced onion and red pepper flakes. Saute over medium to high heat until the vegetables are brown and tender. The cauliflower should still be slightly crunchy and should not taste steamed. Add the garlic and remove from the heat, tossing and stirring so the garlic doesn’t burn; if it starts to brown, add a splash of water. Add a few drops each of vinegar and lemon juice and the toasted walnuts. Taste and correct the seasoning. When the pasta is done, drain and add to the cauliflower, adding enough extra-virgin olive oil to coat the pasta thoroughly, toss together and serve, with the cheese crumbled over the dish.

Muffins with Mom...

Today was Muffins with Mom day at Riley's school - in celebration of Mother's Day. It was fun to take her & Tanner to school and then stay for the Friday assembly. I haven't ever done that- in the 6 years that the kids have been going to school there. It kind of makes me sad...

We got to have iced tea with our muffins and each child gave their mom a yellow rose and a big heart shaped card that had a picture of each child with something they wrote about their mom. I really liked what Riley wrote about me...too cute.

She also showed me that she had entered a essay contest through a jewelry store in Newport- Diamonds for Mom. They were to write why their mom deserved a diamond...her essay was picked, not for a diamond but a garnet. We get to go to the jewelry store and pick one out...isn't that cool??? This little girl makes me happy, I just wish she wasn't such a pill sometimes... ;)

NSD

National Scrapbooking Day was this past weekend and this is all I have to show for it. All I had to do on this layout was glue all the papers down - it has been sitting on my desk for over two weeks!

I was checking out one of my favorite scrappers blog (nora) and she accomplished so much on NSD....oh well... maybe next year!

I don't know why I cannot just ever sit down and work for a few hours...maybe all the interruptions by children...and then I feel guilty if I sit there while everyone else is outside... One of these days, I am going to scrap and get every pile of pictures on pages & off my desk!! (right)

Baseball 08

Here are a couple of my favorite shots of Tanner playing baseball. Check out his face when he is throwing the ball...love it! :) (and look at the length of his hair- he refuses to cut it right now). And I really like the one where he is catching too, such concentration - he really likes to throw out the base runners too.
I cannot claim credit for these photos- they were taken by Shooting Stars sports photography - I can never get shots like these.

I wish he loved playing baseball- he doesn't. He said if he could play football year round he would...but I think he would get sick of football if he did that. Oh well, at least he has a passion for football!
